Do you really want to have a nice lunch and eat something other than a bammetje? Then make these delicious lunch wraps, they are also easy to take with you and both hot and cold tasty.
I don’t often have the same lunch, sometimes with a sandwich or a salad. Or a scrap of something I had left from the previous day. One of the things I do eat regularly at lunch is tzatziki. I find that so nice and fresh and it is also justified. About 2 to 3 times a month I therefore make a large bowl with this creamy Greek cucumber dip. And with tzatziki you can go in any direction, it is also delicious on a toast or cracker, with a couscous salad or as a dip for grilled vegetables.
It took me a while to discover the recipe for the perfect tzatziki. There are a few things that are important; first, after grating the cucumber, I squeeze out as much moisture as possible, so that you prevent the tzatziki from becoming watery. But the most important thing is that you use creamy and good-quality yogurt. That’s why I always use FAGE Total 0%. This one really has a very thick creamy structure and is wonderfully fresh in taste. In addition, FAGE Total 0% is also rich in protein and protein and no sugar is added to it. It is therefore also ideal as a basis for a nutritious breakfast or as a snack after a workout.
Tip: I always buy a pot of 500 gr so that I can immediately make a nice stock of tzatziki for the whole week.
For the wraps I also used wedges of tomato, avocado and hummus. And to spice up the dish a little, I seasoned the chicken pieces with taco herbs and a pinch of chili. I used vegetarian pieces of chicken instead of real chicken and that went perfectly in this dish, Eric didn’t even taste any difference. Another tip to make the dish a little tastier; heat the wraps in a dry frying pan and not in the microwave. By frying them briefly in the pan they get a slightly smoky taste and a nice color.
For lunch you can eat 1 or 2 of these mini wraps, but you can also serve them for dinner. Then keep about 3 pieces p.p. or serve some rice, for example. I hope I inspired you again for a nice lunch. Below you will find the complete recipe.
Recipe mini wraps with chicken and creamy tzatziki
LUNCH – 25 MINUTES – 8 PIECES
lettuce Approx. 200g (vega) chicken in
pieces 1/2 tbsp taco spices (or other Mexican spice mix)
Pinch of chilli powder
1 tbsp oil
8 mini wraps (gorditas)
250g FAGE Total 0%
Cucumber 1 garlic
Pinch of pepper
and salt 1 tbsp olive oil 1 tbsp lemon juice Sprig fresh parsley and/or mint
First make the tzatziki: grate the cucumber and squeeze out excess moisture in a sieve. Mix the cucumber grater with the FAGE Total 0% yogurt. Squeeze in the garlic clove and add the olive oil and lemon juice. Season with a small pinch of salt and pepper. Finely chop the parsley/mint and stir in. Put the tzatziki in the fridge for so long.
Season the chicken with the taco spices, chilli and 1 tablespoon oil and mix together. Bake in the pan for a few minutes until the chicken is cooked through. Bake the wraps in a dry frying pan for a minute. Then smear them with a layer of hummus and top with lettuce and wedges of tomato and avocado. Spoon a little chicken on top and finally some fresh tzatziki. Fold the wraps, you can button them with a string or stitch them with a prick.
Serve the mini wraps with some extra tzatziki.
